Every feast begins with an emotion. Celebration, adventure, exploration or homecoming—each Royal Table experience tells a different story through food, hospitality and the rituals of sharing.
A joyful, generous feast inspired by the abundance of an Indian wedding table—created for milestones, family gatherings and occasions meant to be remembered together.
A bold, rustic journey built around fire, smoke and deeply spiced preparations—evoking the spirit of an expedition without turning history into theater.
An exploration of India’s coastal traditions through fish, shellfish, coconut, tamarind, mustard and the distinct culinary character of its many shores.
A deeply personal feast in which every preparation is cooked in earthen pots—evoking the warmth, patience and nourishing generosity of food prepared at one’s maika.
Each Royal Table follows a considered progression—beginning with welcome, gathering depth through the meal and ending with a final gesture of Maharani hospitality.
A refreshing beverage and a small opening taste begin the journey. An optional Nizami-inspired attar welcome is offered with care and according to each guest’s preference.
A carefully chosen soup opens the palate and introduces the character of the selected journey.
A distinctive appetizer begins the feast with texture, contrast and a clear sense of place.
Two preparations bring together smoke, char, tenderness and India’s varied traditions of fire.
Two contrasting curries reveal depth through patient cooking, regional technique and balanced spice.
The defining preparation of the chosen Royal Table arrives with its accompanying rice, breads and complementary dishes—presented for the table to share.
A composed expression of comfort and celebration brings the culinary journey to a gentle close.
Freshly prepared paan closes the table, followed by a thoughtful parting gesture from the Head Chef and The Maharani team.
A generous progression: one course may present more than one preparation. The precise dishes, accompaniments and sequence vary by the Royal Table experience selected, seasonal availability and dietary requirements communicated in advance.
Rice presentation: pulavs arrive in a warm banana-leaf wrap, while biryanis retain Maharani’s pardah-style sealed-pot presentation where applicable. Shikaar-e-Royale features only the New Zealand Venison Ghee Roast Pulav; Samundari Daawat culminates in Lobster Biryani.
Meaning Before Spectacle. Each tableside moment has a culinary or cultural purpose—revealing aroma, honoring the centerpiece or extending one final gesture of hospitality.
Each pulav arrives enclosed in a warm banana-leaf wrap. Opened at the table, the leaf releases its gentle aroma into the rice and gives the preparation a distinctive sense of arrival.
The sealed crust is opened at the table, releasing the biryani’s first wave of saffron, spice and steam before it is served.
The defining preparation is presented to the whole table before service—creating a shared moment of anticipation without interrupting the natural rhythm of the meal.
Paan is assembled with quiet precision before the guests, bringing freshness, tradition and a gracious sense of completion to the journey.
No flambé, artificial smoke or unnecessary spectacle. Service should remain warm, composed and confident, allowing the food, aroma and meaning behind each gesture to hold attention.
